VINEYARD: Vines are situated in a south facing amphitheater north of the Lima River on gentle slopes with cool Atlantic breezes.
VINIFICATION: Harvest occurred between September 23rd-26th. De-stemmed grapes are pressed by artisanal processes (made in a facility without electricity), then fermented spontaneously on the skins in beeswax-lined clay amphorae. Aged "sur-lie" for 7 months. Bottled without filtration.
