NOTES
VINEYARD: High altitude terrace and gravel hillsides on clay-limestone soil.
VINIFICATION: After a manual harvest with sorting in the vineyard, each plot is vinified and aged separately. Fermentations are carried out naturally with indigenous yeasts, limiting the addition of sulphur and without any other input. Grenache Gris in earthenware jars with 6 months of juice/berry maceration. Mourvèdre in stainless steel tanks. Fermentation with indigenous yeasts, MLF completed. Bottled unfined and unfiltered.
