VINEYARD: In 2020, Mathieu replanted a half-hectare of cabernet franc to Pineau d'Aunis. Biodynamic & Organic.

VINIFICATION: TPineau d'Aunis. Once known as "chenin noir", it has been well established on the slopes of the Vendômois and in Anjou-Saumur. The hand-harvested grapes, half of which are destemmed, are placed in concrete tanks for 10 days of carbonic maceration and spontaneous fermentation with native yeasts.Aged 12 months in foudres.
