VINE AGE: 40+ years
SOIL TYPE: Schist and Orthogneiss
VINIFICATION: Temperature controlled fermentation in stainless steel. Aged 6 - 8 months on the lees.
FARMING: Lutte Raisonnée
TASTING NOTES: The color is a very pale yellow. There are very small bubbles, called "Perlant," that come from the Sur Lie vinification process. Citrus aromas of grapefruits and lemon skin on the nose. The wine is very fresh in mouth with bitter and citrus tones, well balanced with white flower and exotic fruit at the end. Pairs well with seafood in general but in particular oysters or sole meuniere.
