SOILS: Calcareous

VINEYARD: 28 year old vines grown on the highest portion of Giulio’s sloping, calcareous vineyards, on a plot named Débé which sits at an altitude of 350-450 meters in altitude. The vines were planted in this plot in 1975.

VINIFICATION: All destemmed fruit first goes into a steel tank and is left to ferment for one to three weeks on the skins. There are seven to eight pump-overs per day to agitate, and only natural yeast is used. The wine is then transferred to older oak barrels for three months to age. In total, about four months are spent on the skins, with minimal amounts of sulfur added at bottling.

TASTING NOTES: A very structured orange wine made for aging. Pairs best with savory foods. Aromas and flavors of white flowers and pit fruits, and possesses an elegant tannic structure
