NOTES
VINEYARD: Carousel Vineyard in the Yakima Valley. Division farms a nearly 6-acre block of Gamay Noir which they use to make their Gamay Rosé and Gamay Nouveau wines. This particular site is prized for its mineral-intense soils formed from volcanic Miocene uplift against basalt bedrock that is layered with primary topsoil made up of quartz and lime-silica, overlaid with the mixed glacial runoff of Missoula floods.

VINIFICATION: Once harvested, the grapes are de-stemmed and pressed immediately. After a few days of settling, the wine is moved to stainless steel tanks for fermentation. A pied de cuve is used to help start fermentation in one of the tanks and let the others spontaneously start. The primary fermentation lasts 30-45 days, and then the wine ages in tank for about 3 more months before being crossflow filtered for clarity and bottled with a small sulfur addition.
