NOTES
VINEYARD: An organically farmed site that Division works with in the northwestern Yakima Valley. The site is on volcanic soils near the Cascade Mountains and features rolling hills and arid landscapes.
VINIFICATION: Following the late September harvest, grapes were immediately de-stemmed then pressed into two stainless steel tanks where they rested for two days before being transferred to their fermenting tanks. Each lot was fermented spontaneously and naturally at separate temperatures to coax nuance and contrasting fruit-driven and savory aromatics. 3 months in stainless steel tank before lightly fining for stability, and making a small sulfur addition before the wine was bottled, also for stability.
