Notes
VINEYARD: On the estate, 9ha of south facing slopes is designated to the Saint-Chinian Berlou appellation which was created in 2004. Only 1ha is selected for vines for this cuvee. The median age of the vines is 50 years old, all of which are planted on famed schist soils of this appellation.
VINIFICATION: Hand harvested. 2/3 destemmed + 3 weeks vatting with punching, maceration of whole bunches. Fermented with native yeasts - with little to no added sulfites. Matured in older barrels for 12 months.
TASTING NOTES: Aromas of small red fruits (raspberry, currant), notes of wild herbs, black tea and spices like cinnamon and dark pepper. Impressive persistence.
