SOIL: Clay and gravel with a base of blue marl
FARMING: Biodynamic
VINIFICATION: Grapes are harvested and vinified separately. Slow pressing, cold settling. Fermentation by indigenous yeast, and aged in cask and concrete eggs for 17 months.
TASTING NOTES: An atypical white for the Marmadais region - and reminiscent of the wines of Alsace. A floral nose, full and fresh in the mouth - redolent of apples, pears and dried fruits. Goes well with shellfish, spicy dishes, saffron, white meats and exotic cuisine. Drink young - or hold for a bit to let other flavors to develop!
