FARMING: Biodynamic, Organic
SOIL: Clay for 1.5m deep and then, limestone underneath. South-east facing vineyard
VINEYARD: 48 years old
VINIFICATION: Grapes are hand-harvested and destemmed by hand. The maceration lasts for 7-8 days. They will extract the tannins gently with punch down only, no pump over. After two years in cement tanks, the wine will be bottled for further ageing in bottle. No SO2.
