NOTES
FARMING: Biodynamic, No SO2, Organic
SOILS: Clay for 1.5m deep and then, limestone underneath. North facing vineyard.
VINEYARD: planted in 2006. First harvest in 2010.
VINFICATION: Grapes are hand-harvested, crushed by feet. After a natural fermentation, the wine is aged for one year and a half in cement tank.
TASTING NOTES: Deep yellow. Fresh citrus, apple and kettle corn (which is sweeter than popcorn) on the nose and in the mouth. Deep and flavorful, showing a multifaceted quality that lingers impressively on the back end. Pecorino’s mouth-searing acidity is evident on the palate despite the 100% malo. Finishes long and vibrant, with very good juiciness.
