SOIL: Medium-textured, calcareous soils

VINEYARD: 4 hectare vineyard with a western exposure. Vines were planted on limestone-dominant soils between 1967-1982 and lie between 1100-1150 ft above sea level.

VINIFICATION: Grapes were harvested by hand during the last half of September. Destemmed, crushed and fermented in contact with the skins for 5-6 days. Dolcetto is a grape varietal that is known to go quickly into reduction and thus needs to be racked quite often to make sure that it has enough oxygen to help the malolactic fermentation and the maturation of the wine.
