NOTES
VINEYARD: Grown on shallow sedimentary clay soil. Bon Sauvage is a barrel selection of Brad and Nathan's favorite barrels in the cellar using the following clones: 43% Pommard, 16% 777, 25% 115, 16% Wadenswil.

VINIFICATION: Grapes were all grown sustainably and hand-harvested. One hundred percent native fermentation and macerated for 24 days before being pressed in a wood basket press. 16 months in barrel (25% new, 75% neutral) before bottling.
