NOTES
VINEYARD: Grapes are estate grown and grown on shallow, sedimentary clay soils at 250-450 feet elevation. LIVE-certified.
VINIFICATION: Hand-harvested grapes were de-stemmed, crushed, then followed by a 24-hour cold soak on the skins with some stem inclusion to increase aromatics. After a gentle pressing, 30% of the juice was fermented in acacia barrels to increase texture and mouthfeel, with the remainder in stainless.
TASTING NOTES: Aromas of green apple and cucumber, with a palate wet stone, pear blossom, kiwi, and alfalfa.
