NOTES
VINEYARD: In 2019, all of the fruit for the Pinot Gris came from Illahe's estate vineyards. Vines are planted on shallow sedimentary clay soils/
VINIFICATION: The grapes were pressed off immediately after the hand harvest and fermented 100% in a 1600 gallon neutral French oak cask. The wine stayed on its lees throughout fermentation and remained for 7 months for élevage.
TASTING NOTES: Lemon zest, mint, Bartlett pear and hay on the nose with flavors of peach pit, fresh fig, nougat, baked apple on the palate. The 100% oak aging gives this wine a great deal of texture and weight while still possessing balanced acidity.
