NOTES
VINEYARD: Soil is of volcanic origin with sandy composition. Due to the harsh weather conditions that have always existed on the island, the dry and inhospitable volcanic soil and mainly the very strong wind, the "kouloures" system of "winding" the vines was invented. The yields in the vineyards of Santorini are incredibly low. Age of the vines averages 50 years old (relatively young compared to the centenarian vines found on the island).
FARMING: Sustainable
VINIFICATION: Fermentation is in temperature controlled stainless steel tanks. The wine is aged on the lees with frequent stirring for at least six months.
