Varietals
60% Old Vine Carignan, 40% Old Vine Grenache. Grapes are organic certified and grown on plots located in the villages of Caromb, Mazan, and Le Barroux (northwest part of the appellation).
Notes
VINEYARD: Clay and limestone sands, stony and deep, allowing for deep roots and resistance to drought. Vines for both varietals are 45 years old.
VINIFICATION: De-stemmed grapes. Quite long maceration/fermentation with one month in vat with cap and soft extraction. Native yeasts and no use of sulfites during vinification. Winemaking and aging in stainless steel.
