SOIL: Schist (galestro) clay-limestone over sandstone
VINEYARD: The single vineyard Cru Vigna di Sotto in Panzano. Vines are planted on a combination "galestro" (schist), with a South-West exposure.
VINIFICATION: The Riserva is the result of a careful selection of only Sangiovese grapes from a single vineyard situated slightly lower than the other estate vineyards at between 430/450 msl. The soil has a greater clay component. Vinified in a natural way by spontaneous fermentation in cement vats, after which the wine is racked and continues its elevage in traditional oak barrels of medium capacity (25 Hl) where it remains for about 24 months. Finally, the wine continue its refinement first in cement vats and finally complete in the bottle where it remains in bottle until release.
