VINEYARD: Assarti, a hamlet in the ancient village of Barge located at the foot of Mount Viso and Monte Bracco of the Alps range. Vineyards lie between 400 and 450 meters on schist soil.
VINIFICATION: Hand-harvested grapes are crushed and de-stemmed before being transferred to steel fermentation vats where they are left to macerate for 4-6 days at controlled temperatures with frequent pumping. After the alcoholic fermentation the wine was allowed to is complete MLF. Aged for a few months in steel tanks until bottling.
