VINEYARD: A 30-year-old plot of vines called “Les Bruchots”. This plot is planted to clay-limestone soil which is also quite stony. All of the domaine's vines are situated in Savigny-les-Beaune. Louis and his family mainly produce the Premiers Crus “Aux Clous”, “Les Hauts-Jarrons”, “Les Lavières” and “Les Talmettes” wines, but also a rare white Savigny-les-Beaune Village wine.
VINIFICATION: The harvest is done by hand and takes approximately a week. Traditional winemaking process: the grapes are de-stemmed, crushed, cold-macerated for a few days then trodden down on a daily basis. The process of fermentation is carried out naturally at low temperatures. Grapes are pressed immediately after being harvested and once the must has been purged, are stored in the cellar in used barrels for the duration of the alcoholic fermentation process. Unlike the domaine's red wines, the white wines are filtered and bottled after a year.
