Notes
VINEYARD: The grapes for this wine are entirely from 4.5 hectares (11 acres) in the galets roulets terroir. Round river rocks on red clay. Mediterranean climate with hot, dry summers, limited rain, and high winds. Certified organic and biodynamic. Gobelet pruning for Grenache and Mourvedre, and trellising for the Syrah.

VINIFICATION: Hand harvested, and respectful of biodynamic and limited-intervention wine-making principles. Varieties assembled in tank. 100% de-stemmed. Light crushing. Temperature-regulated fermentation. 15 days of maceration. One pump-over per day, punch-downs only if necessary. Running-off by gravity. Pneumatic pressing. 9 months aging in large oak foudres for 30% of the wine, while the remainder ages in concrete tank.

TASTING NOTES: Spicy and warm. This cuvée is the perfect addition to your table during cooler temperature evenings. Decanting will coax the wine to open up. Pair with stewed meats, spiced vegetables, mashed potatoes with black truffle.
