SOILS: Eocene marl soil
VINEYARD: Grapes are sourced from two family-owned vineyards: Squarzulis: a 0.30ha plot with terraced hills and an E/SE exposure at an altitude of 240-270m; and Cernetig; a 0 .7ha plot of hilly terrain facing south with an altitude of 150-170m.
VINIFICATION: Grapes are hand-picked and harvested in mid-October. Fermentation is in stainless steel tanks, at controlled temperatures by means of indigenous yeasts and then macerated on the skins for 2 to 3 weeks. Following spontaneous malolactic fermentation, the wine is aged in French oak barriques for two years, with occasional battonage. The wine is aged for at least an additional six months before release.
