NOTES
VINEYARD: La Cabrita, the lowest elevation vineyard (220-340 meters asl) composed of pure granite, planted to treixadura, godello, and albariño in 1892; A Castiñeira, a terraced parcel comprised of clay soils on granite and schist, planted to treixadura and albariño in 1997; Paraje de la Mina, young-vine parcel composed of granite on sand, planted to albariño and godello in 2009; and LA Viña del Médico, composed of sandy soils on granitic base, planted to treixadura and mencía in 1902.
VINIFICATION: Following the manual harvest, the grapes are fermented with indigenous yeasts for 10-20 days depending on variety and plot. Aged in a mixture of 600-liter French oak barrels (godello) and stainless steel (treixadura and albariño) for 3-4 months on the lees then bottled after 6-9 months. Battonage is employed depending on the year. No malolactic fermentations. The wine is fined and filtered.
