NOTES
VINEYARD: A single parcel 80-90 year old vines planted east-west to sandy soil at 2640ft asl. El Santo is a very unique place located in San Pedro de los Oteros. It dates back to 1919 and at that time it was considered by everyone to be an unusual vineyard due to its difficulty in ripening and high acidity. This marked difference lies in its soils which, instead of being clayey like the rest, are sandy. This is what most attracted the attention of the winery to take over this vineyard. This extreme acidity will keep these wines vibrant for years and years.
VINIFICATION: Following the strict table sort, all of the grapes are de-stemmed and fermented with native yeast in old wooden vats. Full MLF in oak before being aged for 2 years in 500L French oak barrels then aged at least another 2 years in bottle prior to release.
