NOTES
VINEYARD: Traditionally-trained bush vines oriented east-west with ages ranging from 60-100 years old. Soil composition is a stony topsoil and clay subsoil. Altitude range is from 2450 ft to 2700 ft asl.
VINIFICATION: Following a strict sorting, all the grapes are de-stemmed and fermented with native yeasts in 5,000L old wood vats. The wine remains on the skins for about 2 months and is then pressed. Aged for 24 months in 500L French oak barrels before being bottled.
