Black Currant Liqueur

C. Cassis is a domestic botanical blackcurrant liqueur crafted by Rachael Petach with fresh blackcurrants from the Hudson Valley. The fruit goes through a two week maceration on rosé wine from NY state. As soon as fermentation starts, it is stopped by the addition of distillate, the fruit is pressed, and botanicals of green cardamom, bay laurel, lemon verbena, and citrus rinds are added. This combination steeps for an additional two weeks, raw honey is added, then bottled after a short tank rest.
