VINEYARD: The vineyards of Ca Del Monte are planted with 20-40 year old vines of Corvina, Rodinella and Molinara grapes that are planted in poor soils that stress the vines and nurture the fruit. Vines average in age from 15 to 40 years.
VINIFICATION: Soft pressing and slow fermentation at controlled temperatures in stainless steel. Six months later, maceration starts on the dregs of the pressed grapes of Amarone to induce a second fermentation to improve structure and complexity of the wine. Aged for 18 months in large barrels of French and Slovenian oak.
