FARMING: Certified organic.
VINEYARD: 12 hectares of vineyards in Solopaca, between 300 and 1000 feet, are split into two plots: Pozzillo and Cesine. The former, at a lower altitude, is mainly sandy with a plentiful water supply; the latter is at higher altitude with clayey, volcanic soils. Falanghina was planted in Pozzillo between 2003 and 2008.
VINIFICATION: Controlled low temperature fermentation in stainless steel using selected yeasts. Aged in stainless steel for eight months, three months time on the lees, and three months in bottle.
