VINEYARD: Various estate parcels in and around the village of Sangalhos in the Bairrada DO

VINIFICATION: Each varietal is grown in separate parcels and macerated and fermented separately using indigenous yeasts. The wines of Casa de Saima are vinified using traditional, low-intervention methods: grapes are hand-harvested, foot-trodden and open-fermented in stone lagar, before being aged in large, 100 year old casks for 12 months in used oak casks (the minimum for a Colheita is 8 months)
