VINEYARD: Various estate parcels in and around the village of Sangalhos in the Bairrada DO

VINIFICATION: Each varietal is grown in separate parcels and macerated and fermented separately using indigenous yeasts. The wines of Casa de Saima are vinified using traditional, low-intervention methods: fermented in Lagares with minimal interference. Aged 2 years in large, seasoned oak casks (100 year old).
