NOTES
VINEYARD: Planted in the early 1990s at an altitude of 370 meters asl.
VINIFICATION: Traditional hand-harvest using small 16 Kg perforated baskets. De-stemming and immediate soft pressing. The must is fermented spontaneously in stainless steel tank, checking that the temperature does not exceed 22 ° for a duration of about 12 days. Subsequently, the new wine is decanted two more times - 15 days apart - to obtain the natural decantation of solids. Aged for 30 months on its fine lees, with a weekly bâtonnage.
