VINEYARD: The Domaine is made up of 3 hectares of Chenin Blanc, and 8 hectares of Cabernet Franc, all over 28 plots in three villages. The vineyards have been farmed organically since 1997, and biodynamically since 2012. All vineyard work is done manually, with native yeast fermentation and as little intervention as possible. The dominant soil types are limestone and tuffeau stone with some small areas of gravel and sandy clay..
VINIFICATION: Hand-harvested in small bins. Native yeast fermentation in barrel at cool temperatures for 4 months. Malolactic fermentation occurs naturally during aging in oak (30% new barrels for 12 months). Bottled unfined and unfiltered.
TASTING NOTES: This Chenin Blanc has citrus fragrances which then tend to exotic flavors like pineapple and lychee. This liveliness is offset by toasted and buttery notes. It’s got an explosive smoky aroma backed up with rich stone fruit, minerality and a backbone of acidity. It’s wonderful right away with light fish or poultry dishes, but with a bit of bottle age is a rock star bottle to open for holiday meals or special celebrations.
