SOILS: Volcanic and Clay deposits
VINEYARD: Located on the hills of Cori at an altitude of 200-250m above sea level. The soil here is volcanic with some clay. Farming is organic. Yields are low at 8-10 tons/ha. Harvest usually extends from the last week of September into October.
VINIFICATION: Soft pressing and destemming, fermentation with skin contact for about 10 days at 24°C. Malolactic fermentation, aging in stainless steel tank for 12 months, with an additional 6 months spent in bottles before release.
