NOTES
FARMING: Organic

SOIL: Primarily limestone, interwoven with compact layers of fresh clay and tufa.

VINEYARD: Vittoria in southeastern Sicily. The vineyard sits at 230 meters above sea level and the average age of the vines is 25 years.

VINIFICATION:  Harvest occurred in late September and carried over into the first days of October. Spontaneous fermentation in terracotta amphorae, on the skins with indigenous yeasts, followed by aging in amphora and bottle.
