VINEYARD: Situated north of the capital of Burgundy (just beside Clos du Roi), the En Genêt plot is planted on limestone soil, brown, mixed with clay and sand. Vines : 2.49 acres -35 years old.
FARMING: Lutte-raisonnée
VINIFICATION: All parcels picked by hand using shallow bins. Grapes are 100% destemmed. Vatting time is about 3 to 4 weeks with temperature control. Aged in oak for 12 months before bottling.
TASTING NOTES: Decanting is recommended at least 1 - 2 hours prior to service. Pairs well with lighter meats and a variety of cheeses. A smoky nose with red and black fruit aromas.The palate is charming with complex flavors and good tannin structure that are dominated by red fruit and earthy flavors. Fresh and lively when young, it can develop in the bottle for up to 10 years under proper conditions.
