NOTES
VINEYARD: A .07ha (1.5 acres) southeast-facing parcel located halfway up the hillside at 250-300m (820-985 ft), not far from the Pommard appellation. Average age of the vines is 30 to 35 years. A fine layered soil with bedrock close to the surface. No herbicides are used. Sustainable treatments such as regular working of the soils and natural organic fertilizer. Sustainable-certified (HVE) as of 2021.

VINIFICATION: Hand-harvested grapes with 70% de-stemmed, 30% whole cluster. Indigenous yeast fermentation taking about two weeks in concrete tanks. Aging for 12 months in oak barrels (25%new, 75% seasoned) on the lees. Unfined, lightly filtered.
