NOTES
VINEYARD: One hectare (2.5 acres) plot facing southwest. The age of the vines averages between 30 and 35 years. Clay limestone soils at an elevation of 300m (985ft). No herbicides are used. Sustainable treatments such as regular working of the soils and natural organic fertilizer. Sustainable-certified (HVE) as of 2021.

VINIFICATION: Hand-harvested grapes with 65% de-stemmed, 35% whole cluster. Indigenous yeast fermentation taking about two weeks in concrete tanks. Aging for 12 months in oak barrels (25%new, 75% seasoned) on the lees. Unfined, lightly filtered.
