VINEYARD: From organic parcels Frédéric recovered from 2007 to 2009. Low yields, which concentrate the fruit. Frédéric says that unlike gamay, it's not possible to make a nice cabernet franc with high yields.
VINE AGE: 45-65 years
SOIL: Gravelly and sandy
FARMING: Certified organic. Single Guyot pruning.
VINIFICATION: Hand harvested into openwork boxes. Gravity flow system. Fermentation in concrete vats with some short pumping over. Malolactic fermentation in a concrete vat. Minimal racking, aged on fine lees for 7 months. Minimal addition of sulphur before bottling.
TASTING NOTES: The style is natural, focusing on the pure cabernet franc fruit with ample concentration due to low yields and attentive viticulture. His wines are full of bright, ripe and vibrant fruit. Powerful nose with notes of raspberry and cherry. Round and charming in the mouth. Pair with rillettes, poultry, Mediterranean cuisine or spicy dishes.
