VINEYARD: The Domaine des Homs is located in the heart of the Minervois, between Carcassonne and Narbonne. Vineyards are on terraces made up of a combination sharp‐edged and weathered clay rocks. The climate is typical Mediterranean with particularly hot summers. The Tramontaine wind drives out any humidity, establishing very favorable conditions for organic viticulture. Vineyards are ECOCERT-certified.

VINIFICATION: Complete, careful de‐stemming, followed by a two‐week‐long fermentation under temperature‐controlled conditions. Once the ensuing malolactic fermentation is finished, the wine is aged in the chais for 6 months in lined cement vats. The wines are then bottled. Once bottled, the wines rest for a time in cellar before being released.
