VINEYARD: From the "La Croix du Bois" plot - 3.5 acres of 20 year-old vines, with an eastern exposure and an elevation of 250m. Vineyards planted on chalky limestone.
VINIFICATION: Grapes are pressed upon arrival to the cellar, and the static must is left to settle for 18 hours. The wine goes through a long fermentation at a low temperature, and malolactic fermentation is completed according to vintage conditions.Aged for six months on fine lees in stainless steel vats, and lightly filtered before bottling. Annual production averages around 210 cases.
TASTING NOTES: The nose displays fresh and crisp white fruits and floral notes. The mouth is refreshing with a nice mineral backbone - finishes fresh and crisp! Pair with oysters, seafood, or goat cheese dishes.
