VINEYARD: The 1.4 hectare vineyard is located at the foot of the hillsides of the Valley with a southern exposure.
VINE AGE: 15-20 years
SOIL: Granite soil rich in clay
FARMING: Sustainable practices. No chemical fertilizers are used, natural grassing between rows - alternating with plantings of rye in the winter (to reduce erosion and improve soil structure). Vines are traditionally trained, with single Guyot cane pruning for most varietals.
VINIFICATION: No malolactic fermentation to preserve freshness of the natural acidity and the aromatic finesse. Ageing on the laths for 24 months, with a low dosage of liqueur added after disgorgement, at 5g/bottle.
TASTING NOTES: Crystal clear with a pale gold color - this cremant has a well developed and complex nose that presents first with fruits (wild strawberry, quince and yellow plums) and develops a more creamy and toasty character. A fine and tender effervescence is on the palate that is followed by a blossoming of aroma. It's firm without being sharp - a very elegant wine.
