VINEYARD: The Holder site is located in Wihr-au-Val - on the lower slope of the hillside with southern exposure.
VINE AGE: 20-25 years
SOIL: Highly decomposed granite, with rich clay veins.
FARMING: Traditional training of the vines, with Guyot single cane pruning for most varieties. Natural grassing between rows, alternating with plantings of rye to reduce erosion. No chemical fertilizers, and any treatments required follow the concepts of sustainable agriculture.
VINIFICATION: Grapes are manually whole-cluster harvested, and each parcel is vinified separately. Grapes are gently pressed whole cluster - and the juice is transferred by gravity to temperature controlled stainless steel.
TASTING NOTES: A delicate and fine nose that opens gradually, evoking white flowers (acacia) with white peach, pear, and quince. The attack is silky and continues a structured palate, opulent and harmonious thanks to a perfect balance between sweetness, power and ultimate freshness that pleasantly prolongs the persistence of this great wine for enjoyment. This promising wine is still young compared to its potential, it will improve as it matures and reward patients who will not wait even a year or two. Perfect for an aperitif, or as a partner to foie gras, game birds, or Asian cuisine.
