VINEYARDS: South-eastern exposure planted on 80% clay and limestone, and 20% siliceous clay. Average age of the vines is 30 years.
FARMING: Lutte raisonnée method. Chemical treatments are kept to a strict minimum. Grass is grown between the rows on 50% of the vineyard area. Organic manure. No waste weeding.
VINIFICATION: Aged for 3 to 4 months on its lees in tank.
TASTING NOTES: Freshness and intensity in the aromas. Pairs well with seafood, charcuterie, grilled fish, goat cheese.
