VINEYARD: Clay-loan and clay subsoil
VINIFICATION: Merlot and Cabernet Franc are vinified separately and fermented in open top concrete vats for about 10-15 days. The Abouriou is pressed whole and goes through semi-carbonic maceration. Only indiginous yeast is used for fermentation. The wine is aged in foudre for 10 month and concrete for 1 month. Bottled unfined and lightly filtered.
TASTING NOTES: Le vin est une fete = wine is a party! This wine is rich yet soft, with excellent length with spicy overtones on the finish. A pleasure to drink with fruity and fresh character. The wine is soft without strong extraction to preserve the delicate tannic structure.
