NOTES

VINEYARD: Totem Ridge Vineyard, located in southern Knights Valley high up on the Mayacamas Range. There are 7 different blocks of Cabernet Sauvignon, all on different exposures and elevations. The vineyard is named for the totems carved out of the redwoods scattered throughout the property. The artist is unknown but the carvings are all dated between 1904 and 1912.

VINIFICATION: Grapes were de-stemmed then transferred by gravity to stainless steel fermentation tanks. After a long cold soak, the must was allowed to warm and ferment with indigenous yeast. The new wine remained on the grape skins for an extended maceration to develop mouthfeel and structure. MLF was left to complete indigenously.
