SOIL: Silty, with limestone and "pietra di langa" stone
VINEYARD: A two-hectare vineyard located in the Alta Langa near the village of Ciglié (southern tip of Dogliani), with a south-east exposure. The vineyards here are at 500 meters (1,800 feet) or more above sea-level, steeply sloped. The higher altitude tends to bring cooler nights, which allows the fruit to retain more acidity, making it perfect for fresh whites and sparkling wines. Vines were planted in 1995, 1998 and 2004.
VINIFICATION: Harvest is at the beginning of October. The cool fermentation (60°F- 15°C) takes place in stainless steel and lasts about 40 days; the wine is the cooled to discourage malolactic fermantation, and aged on the lees for about six months in stainless steel tanks (without batonnage), and is bottled in May. Residual sweetness remains about 5-6 g/l due to the low temperatures of the fermentation, this slight residual adding to the varietal expression of Riesling.
