NOTES

VINEYARD: Sourced from benchland vineyards in Mendocino County

VINIFICATION: 66% of the grapes are destemmed, then transferred by gravity to stainless steel fermentation tanks, while the other 33% was left whole cluster and added to the bottom of the tank. After a long cool 5 day soak, the must was allowed to warm and ferment with indigenous yeasts. The fermented wine was pressed off slightly before dryness and malolactic was left to complete with indigenous flora. Aged for 12 months in neutral and new (30%) French oak barrels.
