NOTES
VINEYARD: All estate fruit. From vines around 35 years old planted on 1.5ha of schist and granite soils. The stony soils are derived from shale and granite and the slopes softened by the altitude, between 500 and 700 meters, give the vineyards unique characteristics.

VINIFICATION: These grapes are hand harvested at the end of August, vineyard sorted, undergo whole cluster pressing and undergo fermentation in stainless steel (5000L) with wild yeasts for seven weeks under temperature control. The wine is aged four months on lees with stirring occurring once a month. Not fined or filtered.
