NOTES
VINEYARD: From 2 hectares of 18 year old vines. The stony soils are derived from shale and granite and the slopes softened by the altitude, between 500 and 700 meters, give the vineyards unique characteristics.

VINIFICATION: Produced in the Ancestral Method to create its fizz: the wine is bottled prior to completing its first fermentation allowing carbon dioxide to be produced by the natural sugars found in the grapes.
