Summary
Fourth generation winemaker Bernard Defaix established his domaine in 1959 with two hectares of land. Bernard’s two sons Sylvain and Didier took over in the 1990s and oversee operations today: Sylvain is winemaker and supervises the cellars; Didier takes care of vineyard management as well as overall domain management; Hélène, Didier’s wife, is responsible for the administrative and commercial aspects.
Today, vineyards stretch over 27 hectares including three Premier Cru vineyards: Côte de Léchet, Vaillons and Lys, and others in the Chablis and Petit Chablis appellations. After many years moving towards sustainable and more ecological farming practices, the vineyards were officially certified organic by Ecocert in 2009. Known for creating truly elegant wines, they produce exclusively Chablis, and are widely considered to be one of the finest producers in the region today.
